Greater Copenhagen as a Future Food Mecca

Greater Copenhagen as a Future Food Mecca

A new project, which focuses on Greater Copenhagen as a future food mecca, has been initiated in 2016. The aim of the project is to cause interest and demand for local food products from Greater Copenhagen, from local inhabitants as well as from tourists. This will be done by developing new knowledge about food experiences and by creating new concepts for consumers’ food and meal experiences.

Designed tourist places are the theme of an ongoing field work conducted by Professor Jørgen Ole Bærenholdt and Academic Assistant Anita Kjølbæk who are members of the MOSPUS research group and Center for Experience and Tourism Research. Development Project: Local Food and Public Institutions

Jon Sundbo, from center for Experience and Tourism Research, has during 2015 and 2016 been involved in a development project on the island Lolland in collaboration with the company Innoplan and Fælleskøkkenet. Fælleskøkkenet produces and delivers food for various institutions in Lolland and Guldborgsund municipalities as well as in Region Zealand.

New research project will create knowledge about the potential for developing new innovative experiences in Danish coastal tourism. The project is a collaboration between a number of research institutions in Denmark and involves researchers from Center for Experience and Tourism Research.
